For 4 people: 2 Sea Bream Fillets – 6 or 8 potatoes depending on their size – 3 Shallots- 2 garlic cloves – 1 tomato – 6 tbsp. of Olive Oil – 6 tbsp. of Balsamic Vinegar – 1 Bunch of Parsley – Salt – Pepper



Boil the potatoes with their skin in salted water. Make sure not to get them overcooked. Peel and slice them into rings. Cut the sea bream fillets into dices and take these to boil them in salted and peppered water for 7 to 10 minutes, then drain them.

On a serving plate, arrange the slices of potatoes nicely. Add a little bit some salt and pepper but not very much as the potatoes have already been cooked with salt. Add some chopped shallots, chopped garlic and chopped parsley on top of it then drizzle with some olive oil and some vinegar. Arrange the second layer of potatoes slices and repeat the same seasoning process as above. Place the diced sea bream on the top of the salad, spread on them the remaining garlic, shallot and parsley. There is no need to drizzle the fish with oil and vinegar to keep the taste of its natural freshness. Decorate with some dices of tomatoes.

Leave the salad in the fridge for some hours according to your availability to allow it to absorb the seasoning then serve. This simple but delicious salad can well serve as a starter or as the main dish.
